Chikuwa is a Japanese fish cake shaped into a hollow tubular shape which is made by mixing the fish paste ingredients, wrapping around bamboo or metal stick then steamed or broiled. It has a soft, springy texture and delicate sweetness. The word chikuwa ("bamboo ring") comes from the shape when it is sliced.
Chikuwa is a common ingredient in Oden and is also used in Izakaya fare like Isobe Age (Chikuwa tempura).
