This stain-resistant gyuto is ideal for those who want the sharpness of thin Japanese blades but are reluctant to care for carbon steel knives. The gyuto is the Japanese version of the classic Western chef's knife but the blade is thinner and holds a sharper edge. Use it for chopping, mincing and slicing meat, fish, vegetables and fruit. This knife does not have a bolster.
VG1 is a high-carbon stainless steel manufactured by Takefu Special Steel Co. It is designed to have excellent keenness and edge-taking properties while maintaining good toughness and ductility.
