Saicom Corporation has designed a new series of stones that produce a higher level of hardness, carbide, and abrasion resistance for the modern day. Saicom understands chefs need to sharpen their knives as efficiently and effectively as possible and as such this new series of stones incorporate a higher level of abrasiveness to achieve a consistent finish in minimal time.
This 2000 grit stone from Sigma Power Corporation is made from a vitrified alumina base and cuts a wide variety of steels very well. Though both this stone and the 1000 vitrified Sigma stone are marked as "hard," this 2000 is noticeably less friable. It leaves a very nice aggressive edge perfectly suited to kitchen tasks such as cutting tomato, peppers and onions without slipping. This stone is less suited to polishing than the 1000 Sigma Hard and more suited to daily touch-ups/regular sharpening. #2000 grit Vitrified Alumina Stone. It cuts steel very fast and surface won’t concave easily.
