This Bird's Beak Paring Knife has a short, curved blade and is designed for making decorative cuts for garnishes, as well as for peeling, and slicing soft, small fruits such as kiwis or plums.
1. Blade Quality
The core steel of VG-MAX is a cobalt-stainless alloy with excellent edge retention and grind ability and is jacketed on either side with multiple layers of mild stainless steel. These knives are brought down to an acute taper and sharpened at 16 degrees per side to bring great cutting performance while maintaining a durable edge.
2. Handle Shape
Shun's hybrid D-shaped handle fits comfortably in any grip. The handle is made from PakkaWood® which is resistant to shock, moisture, and temperature change.
