Use Shapton coarse grit stone to fix minor chips and damages and to create a new edge on a dull blade. You can also use a coarse grit stone to change the bevel angle ratio of your knife. After using a coarse grit stone make sure to finish the sharpening process with a medium or fine grit stone to smooth out the scratches and to obtain a sharper edge. Shapton ceramic stones should not be soaked, making knife sharpening more convenient
