Ginsake, also known as Coho Salmon, is moderately fatty with a mild salmon flavor and flaky texture. It is also rich in omega 3’s EPA and DHA. The marinade consists of mirin and sake kasu (sake lees). Sake kasu is a by-product of sake production. Not only is it packed with nutrients, sake kasu adds complex umami flavors while masking any unwanted fish odors. Simply bake in a toaster oven or fish roaster.
