These Hinoki cutting boards (Manaita) are manufactured to specification for us in a factory in Japan. Hinoki is a soft wood prevalent in many aspects of Japanese culture from bath houses to shrines to flooring to furniture and more. Hinoki exudes a pleasant piney aroma even when dry and the intensity ramps up when wet. These cutting boards are made from pieces of quartersawn Hinoki joined together with the straightest possible grain to maximize dimensional stability. Hinoki, being a soft wood, is gentle on knife edges although as such it is also susceptible to deformation from relatively minor bumps and nicks including scratching hard with a fingernail.
Single piece Hinoki cutting boards are the optimal choice for stability, but for larger size cutting boards require the tree to be of comparable size which is becoming rarer.

Hinoki is best left untreated with waxes or oils and simply washed with hot water, soap, and the use of a bristle brush such as a tawashi and then left to dry. Staining may occur when using the board. In order to prevent staining, you may wet the surface before use to mitigate any pigment from the food being cut and seeping into the wood. When drying these cutting boards it's recommended to leave them upright with the grain running vertically.
Hinoki is a soft wood. Please be aware that dents or scratches are common and can occur very easily. These boards may be sanded in order to refinish. Please consider this before placing an order.
Hinoki contains natural sap which may be found at the cut edges of the wood. This is totally natural and safe.
