"Junmai su" translates to pure rice vinegar. As the name implies, this vinegar is made only from rice (no additives). It combines pesticide-free cultivated rice and water from Aya in Kyushi. The water from Aya is designated as one of the “100 Famous Water” by the Ministry of the Environment. The vinegar is made over a period of 6 months using these simple ingredients and traditional methods. The ingredients are combined in a giant clay pot (which can hold from 300-500 liters of vinegar) and left in the hot tropical sun. Inside the vessel, the aspergillus (fungi), yeast, and acetic acid bacteria are constantly active, and the organic acids produced by them and the amino acids in brown rice dissolve into the brown rice vinegar. This versatile Junmai su vinegar can be used in dressings, dips, or as a secret ingredient in various dishes.
