Mochi (Japanese rice cake) is a Japanese treat made with glutinous rice that has been beaten and mixed vigorously to develop its characteristic springy texture. In America, Mochi is commonly thought of as a dessert item which sugar added and eaten in-hand, however Mochi refers simply to the rice cake and they are often grilled and added to soups and broths. These Mochi are packaged individually so that they may be eaten as you wish, preventing them from drying prematurely. Each piece is pre-cut on the surface to let the Mochi expand beautifully when grilled; if you grill un-scored Mochi, it will swell in unpredictable ways. Mochi is not recommended who have difficulty swallowing such as children or the elderly as the Mochi can stick in the throat if it's not chewed adequately.
For a quick and easy-to-follow recipe for cooking Mochi, please see the instructions below (based on a 1000W toaster oven):
1. Grill in the toaster oven until the surface turns lightly brown (3-4 minutes).
2. Turn off the heat and leave the Mochi inside for 2 minutes to continue cooking.
