Takuan are sun-dried and pickled Daikon and are one of the quintessential Japanese pickles. So influential was Takuan that in the early 1900s when food was being imported from Japan it was called the “Takuan Boeki” or “Japanese Pickle Trade”. These are commonly eaten among other assorted pickles or on their own after a meal as a digestif.
