Iburigakko is a smoked pickled daikon radish from Akita prefecture. What makes this Takuan so unique is that it is smoked before it is pickled. This method of pickling developed because of the short days and cold climate in Akita (located in the Northern part of Japan) which made it difficult to dry vegetables out before pickling. Smoking the vegetables before pickling resolved this issue.
The smoky flavor and crunchy texture make this iburigakko a perfect accompaniment to sake.
