What is Wagyu?

Wagyu simply means "Japanese-style beef" in Japanese, but it also points to the main four breeds of Japanese cattle that are prized for their exceptionally well marbled meat.

About Miyazaki Wagyu

Miyazaki prefecture is the 2nd largest producer of Kuroge Wagyu (Japanese Black Cattle), and to be qualified as Miyazakigyu, cattle must be born and raised in Miyazaki Prefecture and graded A4 and above.

What is an A5 rating?

A5 is the highest grade awarded by the Japanese Meat Grading Association. BMS (Beef Marbling Standard) scale is the grading of fat marbling, and A5 is chosen from BMS 8 and higher out of 12 for better marbling.

Miyazakigyu has gained the first prize of "the Prime Minister’s Award" for the “Wagyu Olympics” in 2007, 2012, and 2017 which was the first time in the history that a brand has been able to win for the third consecutive year.

Also Miyazakigyu was offered for the third consecutive year at the Academy Awards ceremony party held in the United States in 2018, 2019, and 2020, and it was honored to be adopted as the first "individual brand beef" in history.

This cut is the highly favored part of the cattle- Strip loin that is cut into 20mm thickness per piece. BMS (Beef Marbling Standard) is the grading of fat marbling, and A5 is chosen from BMS 8 and up out of 12 for better marbling.
The melting point of the fat is at the temperature of 25 degrees Celsius (77 degrees Fahrenheit), so you will feel it melting in your mouth.

Chuck eye roll is a cut from the muscle between the neck and shoulder blade. This package includes the finest A5 grade Miyazakigyu Chuck eye roll trimmed for ease of use and sliced ​​to a thickness of 1.3 mm. It is packed in a moderate degassing package without tightly vacuumed so that you can peel off each slice and use little by little even if it is half-thawed.
Enjoy it with sautéing simply with salt, or with BBQ sauce over the rice. Also, these slices are great for Sukiyaki.

How to make Sukiyaki

Ingredients:

(A) For the Sukiyaki Sauce (Warishita)

  • 150ml Soy Sauce
  • 150ml Mirin
  • 6 Tablespoons Sugar
  • 100ml Water

To prepare the Sukiyaki

  • 1 lb sliced Wagyu
  • 2 bunches of Tokyo Negi, cut diagonally
  • 1/2 Onion, sliced to half inch thick
  • Your choice of mushrooms (Shiitake, Enoki, Shimegi, etc.)
  • 1 pack of Shirataki noodles, put into the boiled water for a few seconds and drain the water, cut into about 3-5-inch length
  • Nappa Cabbage, cut into 2-inch pieces
  • 1 pack Tofu, sliced to half inch thick
  • 1 tablespoon Vegetable oil
  • 2 cups Dashi stock
  • Eggs* optional

Instruction:

  • Combine all ingredients of (A) in medium size pot and bring to a boil. Turn off the heat, make sure all the sugar is dissolved, and set aside.
  • Heat 1 tablespoon vegetable oil in sukiyaki pot or large sauce pan. Sauté negi and Onion on the both sides until golden brown.
  • Pour the Sukiyaki sauce until the bottom of the pot is covered and bring to a boil.
  • Sear slices of beef for 10 seconds on the both sides. Remove from the pot and set aside.
  • Add the remaining sukiyaki sauce and 2 cups of dashi stock. Bring to a boil, add the tofu, mushrooms, nappa cabbage, and shirataki noodles to the pot. Simmer until the ingredients are cooked through, about 5-7 minutes.
  • Bring the beef back to the pot to reheat.
  • Traditionally, sukiyaki is enjoyed by dipping into side bowl of whisked raw egg.
