Konnyaku is a unique firm jelly made from a taro-like potato. It is low in calories but high in fiber. On its own, the konnyaku has little flavor but can be seasoned to your liking and even makes a great meat substitute. It is often used in Japanese dishes such as Oden, sukiyaki and can also be used in stir-fries. There is very little difference in flavor or texture between white and grey konnyaku, so it can be used interchangeably and according to aesthetic preference.
