Hatcho miso is made from almost 100% soybeans and matured in authentic wooden tubs for over two years. It is naturally fermented and additive-free. Hatcho miso is blended with rice miso to make Akadashi which is especially great for making miso soup.

Maruya Hatcho Miso is the oldest existing Hatcho miso maker in Japan. Maruya was established in 1337 in Hatcho village. The village was located 8-cho, read “ha-cho”, or about 870m west of Okazaki Castle, birthplace of the Shogun, Tokugawa Ieyasu. Original Hatcho Miso has been prepared in the same way since before the Edo period (1603-1868), using only quality soybeans, natural salt and pure water. Maruya Hatcho Miso continues to produce miso in the traditional way, providing traditional tastes that will be carried on by future generations.
