Natto is a traditional Japanese fermented soybean dish whose probiotics are said to promote gut health. Like Epoisses cheese and durian, natto has a legion of loyal fans. Connoisseurs of these pungent, sticky-textured soybeans considered it the ultimate white rice topping.
This natto hails from Mito which is in Ibaraki prefecture and is one of the most famous natto producing regions. Since the Meiji era, Mito has been synonymous with natto, especially the small-sized soybean natto (小粒納豆).
